Smoked fish production in Indonesia, especially in Ternate, still has various problems in the production process because the tools used in daily smoked fish production are still conventional. Conventional smoking tools have many weaknesses, which certainly hamper the production process of smoked fish. So that the amount of production and market demand for smoked fish becomes unbalanced, this activity targets one of the smoked fish household industries, namely the Delo Fufu home industry, located in the city of Ternate, North Maluku, which still uses conventional smoking tools. Using traditional fumigation tools results in a less optimal rate of ripening fish. The solution provided is to pumpnti conventional fish fumigation tools with a more modern fish fumigation tool, namely with a closed system. The results of this activity show that the product with the security system is better, and the production of smoked fish produced is of higher quality.
